How do notification channels work on Android?

Android allows apps to separate notifications into channels (Votes, DMs, Security). Each can be enabled/disabled independently.

Android Settings › Apps › Klumpsy › Notifications shows all channels.

You can set custom sounds and vibration patterns per channel.
