How do read receipts work?

A small eye icon appears under your message once the recipient has opened the conversation.

Go to Settings › Privacy › Read receipts and toggle off. Note: if you turn them off, you also stop seeing others' receipts.

In group chats, read receipts show how many members have seen the message, not who specifically.
